Do You Still Have Tomatoes In Your Garden? Are some of them still green? If so and your wondering what to do with them let me help you.
Today I made a wonderful green tomato sauce with green tomatoes from Heims Fruit Farm, thank you John!
What you will need is about 5 green tomatoes washed and cored
2-3 peeled cloves of garlic
1/4 cup mint leaves
1/4 cup basil leaves
1/4 cup Italian flat leaf parsley leaves
1/2 cup Arugula and spinach mix
1/2 cup extra virgin olive oil
1/2 cup Parmesan cheese grated
Salt and pepper to taste
Assemble above ingredients a food processor or good blender and mix till it reaches the consistency that you like.
Cook 1 package of gluten free Penne, make as directed on package.
Plate drained cooked pasta and then top with green tomato sauce top off with extra Parmesan cheese.
