Fresh Market SaladCan’t wait for this time of year, it really isn’t that far away!

I think this year I am going to plant my garden a little different to include some of these goodies 🙂

Fresh Market Salad

1 cup Fresh Green beans
1 Scallion
1 tbsp Cilantro
Juice of 1 Lime and 1/2 tsp.zest
Sea Salt 1/8 tsp.
Grape Tomatoes seeded about 8
Red and yellow peppers 1 each
Gluten Free Penne 1 box
Olive Oil 1 1/2  tablespoon

Boil Water enough to cover fresh green beans leave in boiling water only for 1 minute they will become a bright green. Remove the green beans and let them become cool.  (You can use fresh asparagus as well)  Next cut up all ingredients to small bite size pieces and mix with minced cilantro, lime zest, lime juice, salt and olive oil.  This year I have really learned to appreciate the benefits of Kale.  I would even add a 1/2 cup of Kale to this yummy salad if your looking for some great health benefits.

Gluten Free Stuffing

Potato-StffingThis is a favorite at our table during any time of the year. Be it at Thanksgiving, Christmas, Easter or any day in between. Hope it will be yours as well.

Gluten free Stuffing for any occasion
2 loaves of gluten free bread (either homemade or store bought) diced into cubes and toasted under a broiler and cooled
1 medium sweet vidalia onion or yellow onion diced
2 large ribs of celery diced
2 Tablespoons of garlic minced
1 Tablespoon of Rosemary minced (you can use dried use less  3/4 Tbsp)
1 Tablespoon of Thyme minced ( 3/4 Tbsp if using dried)
1 Tablespoon of Sage minced (3/4 Tbsp if using dried)
2 Tablespoons of olive oil
1 cup Gluten free chicken stock
1 egg
3 potatoes boiled till fork tender and mashed, I use red potatoes and leave the skins on
1 can of evaporated milk, check for gluten free
1/2 teaspoon of sea salt
1/2 teaspoon of pepper

Saute the onions and celery in olive oil on medium heat add the garlic and herbs cook for a couple of minutes.  In the meantime heat up the chicken stock, once heated slowly add a little of stock to the egg while whisking.   Then add the onion,celery and herb mixture to the rest of the egg and stock.  After this has cooled down add the condensed milk and mix thoroughly.   In another bowl prepare the potatoes and bread cubes by tossing together well, once that is done combine both mixtures and put into a crock pot and cook for about 4-5  hours on low.  This will make your whole house smell so good, they should invent an air freshener with this scent!

Black Bean Salsa- gluten free

Gluten free Black Bean Salsa
I got this recipe from a great friend that I met through adoption thank you Helena!
3 cans of Hanover black beans (rinsed and drained)
1 medium onion minced
2 large tomatoes chopped
1/2 cup fresh Cilantro
3 Jalapeno pepper chopped ( I take the seeds out if you don’t it will be very hot)
1 tsp. sea salt
3 garlic cloves minced
2 Tablespoons of fresh lime juice
1/2 cup olive oil
1 1/2 tsp cumin
7 Tablespoons of red wine vinegar
mix all the above ingredients and chill for a few hours before serving to give the flavors time to blend, serve with your favorite gluten free chip. I always use the scoops.

Gluten Free Gravy for Your Turkey…

There are so many uses for gravy on Thanksgiving day.
It goes so well on the turkey or mashed potatoes or stuffing. And why just because we can’t have gluten should we go without gravy?  It makes no sense to me.  So I say make your own and pour it on!

Recipe for Turkey Gravy.
5 cups turkey drippings if you don’t have enough just substitute with a gluten free chicken stock, Swanson is gluten free http://www.campbellsoupcompany.com/pdf/FAQ_GlutenFreeProductList.pdf
1/4 cup all purpose gluten free flour (you can find that recipe here on the blog) or you can use arrowroot,cornstarch or tapioca starch
1 cup water

1 teaspoon poultry seasoning, McCormick is gluten free
1/2 teaspoon black pepper
1 teaspoon salt
1/4 teaspoon celery salt

Directions
In a medium saucepan, bring the turkey stock to a boil. In a small bowl, dissolve flour in water. Gradually whisk into the turkey stock. Season with poultry seasoning, pepper, and celery salt. Bring to a boil, reduce heat, and simmer for 8 to 10 minutes, or until thickened.

Do You Have Green Tomatoes In Your Garden?

Do You Still Have Tomatoes In Your Garden?  Are some of them still green?  If so and your wondering what to do with them let me help you.
Today I made a wonderful green tomato sauce with green tomatoes from Heims Fruit Farm, thank you John!

What you will need is about 5 green tomatoes washed and cored
2-3 peeled cloves of garlic
1/4 cup mint leaves
1/4 cup basil leaves
1/4 cup Italian flat leaf parsley leaves
1/2 cup Arugula and spinach mix
1/2 cup extra virgin olive oil
1/2 cup Parmesan cheese grated
Salt and pepper to taste
Assemble above ingredients a food processor or good blender and mix till it reaches the consistency that you like.
Cook 1 package of gluten free Penne, make as directed on package. 
Plate drained cooked pasta and then top with green tomato sauce top off with extra Parmesan cheese.
